It's always exciting to find a wine that can hold you at the "sniffing" stage of the tasting experience!  This must be what drinking pure silk would be like. 
The tannins have been completely tamed, while the acidity is perfect to go along side dishes containing chocolate, like Mexican Mole dishes, savoury dishes containing wild mushrooms, rosemary, thyme, and warmer spices like cinnamon, cloves, fennel and black pepper.
