Domaine Delmas Cuvee Memoire Brut Nature 2011
Small wink to the past of the Maison Delmas at the time when the grand-father and then the father of Bernard Delmas were making the vinification of the Blanquette Méthode Ancestrale entirely in barrels, more precisely in chestnut barrels bought at the local coopersmith. Indeed, this special wine is the result of a blend of Mauzac (mainly) and Chardonnay and is elaborated with only wines vinified in old oak barrels. For this cuvée, the juice is extracted at low pressure between 300 and 600 g. Only the hearts of cuvée are then put in oak barrels and aged during 8 months on fine lees. This is the need to come back to the roots that expresses itself in this cuvée which brings ahead the local and traditional grape : Mauzac. Rich, complex and mineral. Lively, nice length in mouth. Aromas of pear. A fine wine with great expression. Food Pairings: Its richness will allow this wine to accompany fish and also cheeses. Try it with a cod brandade with black olives.
