Cave Spring 2016 Pinot Gris

Gently perfumed notes of Honeydew melon, clementine, pear and honeysuckle greet the nose, with hints of spice (nutmeg, cinnamon) and almond in behind. The palate is dry and medium bodied with a round, creamy attack. Delicate acidity and juicy melon fruit emerge in the middle, underpinned by a mineral yet viscous feel. Notes of fresh herbs, citrus rind and cloves linger on the finish. Pair with grilled or seared shellfish, white-flesh fish (Tilapia, sole, perch), sushi, fish tacos, pasta or risotto with peas & asparagus, vegetable salads. Best consumed 2017 through 2020; will hold through 2022.
