Following a round of renovations, the award-winning team at 90 Main Street is launching under a new name paying homage to the historic property;The Establishment 1858 home of restaurant White House [Fortified] Food + Wine and garden Blanc Canvas Weddings & Events.
In a move that’s equal parts revolution and return to its roots, The Establishment 1858 has become something at once innovative and ancient, a venue for hospitality in its most essential form.
Owners Sid Dinkoudis and Sophie Zervas say The Establishment 1858 will capture the elemental appeal of the Adelaide Hills, serving wines from the region alongside the purest expression of Hills produce.
“We describe it as elegant simplicity,” says Sid. “It isn’t focused on the chef, on the cult of personality. The focus is on the food. Simple food served in simple combinations with minimal intervention, allowing the essence of the Hills to speak for itself. The food, the wine, the building we’re in – everything has emerged from the soil of the region.”
Chef Luke Southwood is bringing his well honed skill to the table, with decades of experience; former restaurateur of numerous worthy restaurants such as Dish Restaurant Raw Bar, Byron Bay, right through to reality television, Master Chef Professionals, Luke is a wealth of industry knowledge. The heart of a true foodie however will always belong in the kitchen so he’s back, knife sharpened and ready to go.
Open on Saturdays and Sundays from 11am till 4pm, the White House [Fortified] will serve up an ever-changing menu of lunch plates accompanied by exclusively Adelaide Hills wines. Combined with its trademark casual yet impeccable service, the White House [Fortified] is set to become one of Adelaide’s new favorite lunch destinations.
At night, everything changes. Dinners at the White House [Fortified] are special occasions, and no two will ever be quite the same. Tantalizing menus are teamed with single malt whiskies from a collection of more than 30 distilleries from around the world, including Scotland and Tasmania. When it comes to whisky John Rochfort, in the veins of the Australian single malt industry and director of the soon to open McLaren Vale Distillery, and owner Sid Dinkoudis are the expert and the enthusiast, conducting informative and entertaining tastings matched with chef Luke Southwood’s masterful culinary creations. Reservations are essential and numbers are strictly limited, ensuring an exclusive and intimate atmosphere.
By day or by night, the White House [Fortified] is a distinctive new addition to Adelaide’s dining scene.
The Establishment 1858 will continue to host weddings in its garden under the name Blanc Canvas. Reflecting the way couples can create their own, deeply personal celebration, the venue has well earned the reputation of being sophisticated, exclusive and adaptable wedding hosts.
The new name is a nod to the White House’s previous incarnation and a declaration of its new, concentrated form. “We’ve tapped into our collective experience of food, wine and hospitality and distilled it to its essence, the elements we most enjoy and most want to share with the world”.
