Tanya is a family winery established in 2001 by Yoram Cohen and named after his daughter. The name Tanya is taken from the Gemara, "Tanya said Rabbi Ishmael," and other places in the Talmud.
The winery is located in Binyamin County, north of Jerusalem, at an altitude of 900 meters above sea level. Around the winery, many wine presses carved in the stone were found, indicating that wine was produced in the area already 3,000 years ago.
The grapes growing in the winery's vineyard arrive when they are optimally ripe, in small crates, chilled by the nocturnal frost, and handled manually in the traditional way.
As they arrive, the grapes are put in a crusher and chilled to a temperature of 10 degrees Celsius. The grape juice is then stored with the pulp for several days before fermenting for 12-16 days.
After fermenting, the juice is aged in French Oak barrels for a period of between 14 and 40 months per bottle.
After bottling, the wine continues to age for several more months in the winery cellars.
The winery started in 2002 with 800 bottles per year, producing wine for family and friends. By 2013, we produce an impressive 39000 bottles per year.
