At Last Castle Brewing, we focus on traditional beer recipes derived from the farmhouse tradition, wild yeasts, and unique Ontario fruits and herbs. Our beers are small-batch brewed using organic, local and wildcrafted ingredients.
We work with our team of local farmers and talented herbcrafters to produce refreshing farmhouse ales at our home at The New New Age, located in the beautiful beach town of Port Stanley.
THE ART OF BREWING
Brewing involves the four elements: earth in malt and hops, air to help yeast ferment, water filtered from Lake Erie and fire to fuse everything together. The alchemy of these elements helps bring about something remarkable.
The age-old magic of beer derives from this simple creative process and of course sourcing the best ingredients nature provides: water, malt, hops, yeast, fruits and herbs.
OUR BEER STYLE
Our beers are influenced by the farms and forests around us. We primarily look to farmhouse traditions and the specialty brews that originate from medieval times.
We then merge these traditions with modern brewing techniques and the unique locale of Ontario's Southwest which we call home.
Using fruits and herbs, wild yeast strains and other traditional wizardry, our goal is to produce refreshing, dry beer that pairs exceptionally well with the seasonal food menu at The New New Age.
