The Clos Bagatelle domaine has been run by the Simons family since 1623, when their ancestors bought plots of land in and around the town of Saint Chinian. Today, the brother-sister team of Luc and Christine farm 60 hectares of vineyards, whose soils are a combination of schist, limestone and clay, at an average altitude of 120 meters.

As the vineyard manager, Luc treats his vines with the utmost care, using sustainable agricultural methods, and harvesting everything by hand. The very old Carignan and Grenache vines are planted in arid soils and are trained in goblets. The Syrah and Mourvedre are younger, having been planted in the 1970's, and trellissed.

Christine is the winemaker who vinifies all the varietals separately in order to be able to control the final blend through a series of careful trials. The wines are aged in large old wood barrels to achieve good roundness, without imparting any oak flavor.
