Life on the land of Les Ollieux arrived at the same time as the Romans. The place was known for its drinking water sources (always present and used to regulate the temperature of the barrel cellar). But at the time, the vine was not much developed and the Ollieux were less a domain than a smallholding farming cereals, olive trees and grazing flocks of sheep.
The origins of the vineyard date back to the eleventh century with the family Durban-Latreille who lived near Les Ollieux. One of the daughters of the family built a priory which was attached to the Abbey of St. Eugenie. Subsequently, the priory and all the adjoining vineyards were attached to the abbey of Fontfroide.
