2 tablespoons olive oil
6 oz pancetta or bacon, diced
1/2 yellow onion, finely chopped
2 garlic cloves, minced
Pinch of dried crushed red pepper flakes
2 spicy Italian sausages, with the sausage casings removed
1-28 oz can of diced tomatoes, plus a half can of water if the sauce is too thick
1/2 teaspoon salt, or more to taste
1/2 teaspoon freshly ground black pepper, plus more to taste
1/4 cup grated Pecorino Romano cheese

- In a large, heavy skillet, heat the oil over medium heat. Add the pancetta and sauté until golden brown, about 8 minutes.
- Add the onions and garlic and sauté until tender, about 5 minutes. Next add your sausage meat, breaking it up with a wooden spoon.
- Add the red pepper flakes and sauté for another 30 seconds. Stir in the crushed tomatoes, water if necessary, and the salt and pepper.
- Simmer, uncovered, over medium low heat until the sauce thickens slightly and the flavours blend. Season with salt and pepper as necessary.
