Grilled Chicken & Mango Salad Recipe

Mangos are rich in Vitamins A, C, & D. They’re low in calories, high in fibre, and a source of potassium.

This Salad Recipe Serves 3-4


Ingredients for Salad:

2 chicken breasts

4 tablespoons of sesame oil

Salt and pepper

2 ripe mangoes, but into thin bite sized strips (think Julienne French Fries)

2 green onions, finely chopped

1 spicy red Thai chilli, or hot sauce, enough to suit your taste

Juice of 3 limes

6 cups of romaine lettuce, roughly chopped or torn into pieces

1/2 bunch cilantro, chopped


Directions for Salad:

  1. Toss the chicken breasts with half the sesame oil and salt and pepper. Grill the breasts over high heat on a barbecue, or cast iron indoor grill. Allow to cool. Dice into bite sized pieces.
  2. In a large bowl, toss the mango strips, and any juice they make, with the green onions.
  3. Squeeze out juice of 2 limes. Add the romaine lettuce, cilantro, chillies, chicken and remaining sesame oil and toss to combine.
  4. Give the salad a taste to determine flavour – is it a good balance of sour, sesame oil and salt and pepper? Squeeze over remaining lime juice if necessary and serve.


Wine Pairing for Mango Salad with Grilled Chicken: Gewürztraminer

The pairing principle here is you want to pair “like with like.” Try matching flavours in the salad with typical flavours of a particular grape variety. Since the salad has a balance of sweet (mango) and spicy (chilis) the wine it best pairs with is a Gewürztraminer. This grape variety is known is a spicy grape, as Gewürz means spicy. This is also a wine that you’ll find has plenty of tropical fruit flavours to it like lychee, passionfruit and you guessed it — mango!
