How to make the best Blueberry Almond Cake

 

Ingredients for Blueberry Almond Cake Recipe

4 eggs

1 cup icing sugar

1 teaspoon vanilla extract

1 cup self-raising flour

150g butter, melted

1 cup of almond powder (finely ground almonds)

250g blueberries

250ml carton of whipped cream

 

Steps to bake Blueberry Almond Cake

  1. Pre-heat oven to 325°F. Place the eggs, sugar and vanilla in the bowl of an electric mixer and whisk, slowly at first, then on high for 8-10 minutes or until very thick, pale and tripled in volume.
  2. Sift the flour over the egg mixture and fold through manually with a rubber spatula. Fold through the butter and almond meal.
  3. Pour mixture into a 8 or 9 inch baking pan lined with parchment paper and top with the blueberries.
  4. Bake for 30-35 minutes or until cooked when tested with a skewer. Place the Blueberry Almond Cake on a wire rack to cool. Slice to serve with a dollop of whip cream and a delicious glass of wine.
